Ingredients:
- 2 whole Boneless, Skinless Chicken Breasts
- 1 stalk Celery
- 1 whole Apple
- 1c. Red Grapes
- 1 c. Maple Activated Native Texas Pecans
- 1/2 c. Mayonnaise
- 1/4 c. Sour Cream
- 1/4 Lemon, Juiced
- Salt and Pepper to taste
- (Optional but highly recommended) 1/4 Red Onion, finely diced
Instructions:
- Season each chicken breast generously with salt and pepper. Cook using your preferred method (roast, grill, sous vide, etc.) until the internal temperature reaches 165 degrees. Allow to cool completely and cut into bite sized pieces.
- Chop the celery and apple, half (or quarter if large) the grapes, and roughly chop the Maple Activated Native Texas Pecans.
- Add the chicken, celery, apple, grapes, pecans, mayonnaise, sour cream, and lemon juice to a large bowl. Mix until well combined.
- Taste and season with salt and pepper if needed.
- Serve immediately and keep leftovers in the fridge for up to 3 days!
